Collected in spring by mouals at the edge of the Sundarbans, when the khalisha trees are in flower. Light amber, mild and floral.

- How to use: By the spoon, stirred into warm (not boiling) water, tea or yoghurt, or over roti and pitha.
- How to store: Lid closed, at room temperature, out of the sun. No need to refrigerate; crystals melt in warm water.
