Why honey turns thick and grainy (and what to do)

Many customers message us in winter: “My honey has gone solid. Is it fake?” Almost always, the answer is no. Crystallising is something natural honey does on its own.

Why it happens

Honey is mostly two natural sugars. When it is cool, one of them slowly forms tiny crystals, and the honey turns thick, cloudy and grainy. Honey from mustard flowers does this within weeks; Sundarbans honey can stay liquid much longer.

How to make it liquid again

Close the lid and stand the jar in warm water, about as warm as a bath, for 10 to 15 minutes. Stir and repeat if needed. Do not boil it or heat it in a microwave.

How to store it

At room temperature, lid closed, out of direct sun. The fridge makes it crystallise faster, so there is no need to keep it there.

Is runny honey better?

Not necessarily. Whether honey stays liquid depends mostly on the flowers the bees visited and the weather. It is a matter of taste: some people prefer the creamy texture.
